Roasted fish is a foolproof way to prevent overcooking. Keep your seafood delicious and tender using Hellman’s/Best Foods Cilantro Lime Sauce and roast on seasonal vegetables of your choice.


2 tomatoes, chopped

1 zucchini, chopped  

2 shallots, quartered and skin removed

1 jalapeño, deseeded and chopped

2 tablespoons extra virgin olive oil

1/2 grapefruit, sliced in 1/4 inch slices

3/4 tablespoon of salt, divided

3/4-1lb. white flakey fish, such as cod

1/2 cup Hellmann’s/Best Foods Cilantro Lime Sauce

2 tablespoons chopped fresh cilantro

2 tablespoons chopped fresh basil

1 lime, halved


1. Preheat oven to 425 degrees F. Toss tomato, zucchini, shallots, and jalapeño with olive oil and 1/4 teaspoon salt. Lay and shingle slices of grapefruit down the center of the tray and place fish on top. Season fish with remaining 1/2 teaspoon salt.

2. In a small bowl combine Hellman’s/Best Foods Cilantro Lime Sauce with cilantro and basil. Juice lime into the marinade and spread over fish.

3. Bake Fish for 15-20 minutes or until fish is opaque and vegetables are tender. Squeeze remaining 1/2 lime over fish and serve while hot.
